  • Preparation: 20 min
  • Cooking: 40 min
  • Makes: 1 serving (31 g)
  • Difficulty: Medium

Ingredients

  • 12 g Oranges, raw
  • 2 g Lemon juice
  • 12 g Sugar
  • 5 g Water

Method

  1. Halve the orange, slice it thinly (peel and all), and pick out the pips.
  2. Put the orange slices in a pan with the water and lemon juice, bring to a simmer, and cook gently for 30-40 minutes until the peel is completely soft.
  3. Add the sugar and stir over low heat until fully dissolved.
  4. Raise the heat and boil rapidly for 15-20 minutes, until the setting point is reached: a spoonful wrinkles when pushed on a chilled plate, or it reads 104°C (220°F).
  5. Skim off any foam from the surface, then ladle the hot marmalade into a clean, sterilised jar and seal while still hot.
  6. Let it cool and set before serving; this makes about 1 serving (roughly a tablespoon), so multiply the orange, sugar, lemon juice and water by about 40 for a standard batch of jars.
