  • Difficulty: Hard
  • Diets: Vegetarian
  • Contains: alcohol, dairy, gluten, nut, sulphite

Ingredients

  • 40 g Flour, all-purpose
  • 12 g Butter, unsalted
  • 5 g Water
  • 25 g Raisins
  • 20 g Raisins, golden
  • 8 g Candied fruit
  • 8 g Almonds
  • 10 g Sugar, brown
  • 5 g Molasses
  • 0.3 g Baking soda
  • 0.2 g Cinnamon
  • 0.1 g Allspice
  • 10 g Milk, whole
  • 5 g Spirits

Method

  1. Makes 1 slice; multiply by 12 for a whole loaf. Rub the butter into 25 g of the flour with the water to make a simple shortcrust pastry; wrap and chill 20 minutes.
  2. Mix the remaining flour with the raisins, sultanas, candied fruit, almonds, brown sugar, molasses, baking soda, cinnamon and allspice.
  3. Bind the fruit mixture with the milk and whisky into a stiff, moist filling.
  4. Roll out most of the pastry and use it to line a small loaf tin, keeping enough back for a lid.
  5. Pack in the filling, top with the pastry lid, seal the edges well and prick a few holes through the top to let steam escape.
  6. Bake at 160 °C (320 °F) for about 45 minutes, until the crust is browned and firm; cool completely before slicing thinly.
