  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 30 g Eggs, whole, raw
  • 30 g Sugar
  • 20 g Flour, all-purpose
  • 20 g Water
  • 60 g Milk, whole
  • 12 g Egg yolks, raw
  • 6 g Cornstarch
  • 0.5 g Vanilla extract
  • 15 g Chocolate, dark
  • 8 g Cream, heavy

Method

  1. Whisk the whole egg with half the sugar until thick, pale and tripled in volume, then gently fold in the flour.
  2. Spread thinly on a lined tray and bake at 190 °C (375 °F) for 8-10 minutes until springy; cool, then cut into small rectangles (enough for a top and bottom).
  3. Dissolve the remaining sugar in the water to make a light syrup and brush it over the sponge pieces.
  4. Whisk the milk, egg yolk, cornstarch and vanilla, cook over low heat stirring until thick, then cool slightly to make a pastry cream.
  5. Sandwich the pastry cream between two pieces of soaked sponge.
  6. Warm the cream and pour over the chopped chocolate, stir smooth, then spoon the glaze over the top of each cake and chill until set.
