  • Preparation: 180 min
  • Cooking: 10 min
  • Makes: 1 serving (526 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Gluten-free
  • Contains: dairy

Ingredients

  • 500 g Milk, whole
  • 25 g Lemon juice
  • 1 g Salt

Method

  1. Heat the milk gently in a heavy pot until it almost reaches a boil (about 90 °C/195 °F), stirring so it doesn't catch.
  2. Stir in the lemon juice and take off the heat; let it sit undisturbed for 5-10 minutes until it separates into curds and clear whey.
  3. Line a sieve with fine muslin set over a bowl, and ladle in the curds.
  4. Sprinkle the salt over the curds and let them drain at room temperature for 1-2 hours.
  5. Gather the muslin and hang or lightly press the cheese in the fridge for a few hours more for a firmer curd.
  6. Unwrap and use the fresh cheese the same day.
