Ingredients

  • 70 g Pasta, dry
  • 120 g Beef, ground, 80% lean, raw
  • 30 g Onions, raw
  • 5 g Garlic, raw
  • 60 g Tomatoes, canned, crushed
  • 8 g Tomato paste
  • 0.5 g Cinnamon
  • 10 g Olive oil
  • 100 g Milk, whole
  • 10 g Butter, unsalted
  • 10 g Flour, all-purpose
  • 15 g Eggs, whole, raw
  • 10 g Parmesan cheese
  • 0.3 g Nutmeg
  • 1 g Salt
  • 0.3 g Black pepper

Method

  1. Cook the pasta in salted boiling water until just al dente, then drain.
  2. Heat the olive oil and cook the onion and garlic for 5 minutes until soft, then add the ground beef and brown it well, breaking it up as it cooks.
  3. Stir in the crushed tomatoes, tomato paste, cinnamon, salt and pepper, and simmer for 15-20 minutes until thickened.
  4. For the béchamel, melt the butter in a separate pan, whisk in the flour and cook for 1 minute, then gradually whisk in the milk and simmer until thickened; season with the nutmeg.
  5. Off the heat, whisk the beaten egg and half the parmesan into the béchamel.
  6. Layer half the pasta in a baking dish, spread the meat sauce over, top with the remaining pasta, then pour the béchamel evenly over the top and scatter with the remaining parmesan.
  7. Bake at 180 °C (350 °F) for 30-35 minutes until golden and set.
  8. Rest for 10 minutes before cutting into squares to serve.
