One serving has 682 kcal and 30 g protein, and at least a fifth of a woman's daily need of thiamin (74%), cobalamin (67%), phosphorus (61%), riboflavin (60%), zinc (50%) and niacin (46%). Ready in 50 minutes.

- Preparation: 40 min
- Cooking: 10 min
- Makes: 1 serving (211 g)
- Difficulty: Hard
- Diets: High protein
- Contains: beef, dairy, egg, gluten, nut, pork
Ingredients
- 90 g Pasta, fresh egg
- 40 g Beef, ground, 85% lean, raw
- 8 g Breadcrumbs, dry
- 5 g Almond flour
- 2 g Sugar
- 15 g Parmesan cheese
- 15 g Eggs, whole, raw
- 20 g Bacon, raw
- 15 g Butter, unsalted
- 0.3 g Sage, dried
- 0.5 g Salt
- 0.2 g Black pepper
Method
- Mix the ground beef, breadcrumbs, almond flour and sugar (standing in for crushed amaretti biscuits), 5 g of the parmesan, egg, salt and pepper into a smooth filling.
- Cut the pasta sheet into small squares. Spoon a little filling onto each, fold into a triangle, then wrap around a finger and pinch the corners together into the classic casoncelli purse shape.
- Bring a large pot of salted water to a boil and cook the casoncelli for 4-5 minutes, until they float and the pasta is tender.
- Meanwhile melt the butter in a pan with the bacon and sage, and cook until the bacon is crisp and the butter smells nutty.
- Drain the casoncelli and toss them through the sage butter.
- Serve scattered with the remaining parmesan.
