One serving has 466 kcal and 41 g protein, and at least a fifth of a woman's daily need of cobalamin (149%), niacin (106%), selenium (81%), vitamin K (80%), pyridoxine (77%) and choline (77%). Ready in 20 minutes.

- Preparation: 10 min
- Cooking: 10 min
- Makes: 1 serving (243 g)
- Difficulty: Easy
- Diets: Dairy-free, High protein, Low carb
- Contains: beef, egg, gluten
Ingredients
- 150 g Veal cutlets, raw
- 15 g Flour, all-purpose
- 50 g Eggs, whole, raw
- 1 g Salt
- 0.3 g Black pepper
- 20 g Vegetable oil
- 5 g Lemon juice
- 2 g Parsley, fresh
Method
- Season the veal cutlet with the salt and pepper, place it between two sheets of plastic wrap, and pound gently to an even 5 mm thickness.
- Set out the flour on one plate and the beaten egg on another.
- Dredge the cutlet in the flour, shaking off the excess, then dip it in the beaten egg to coat completely — unlike Wiener schnitzel, Pariser schnitzel is never coated in breadcrumbs.
- Heat the oil in a large frying pan over medium-high heat and fry the schnitzel for 2-3 minutes per side until the egg coating is golden and the veal is cooked through.
- Drain briefly on paper towel, then serve with the lemon juice squeezed over and the parsley scattered on top.
