- Preparation: 113 min
- Cooking: 25 min
- Makes: 1 serving (88.4 g)
- Difficulty: Medium
- Diets: Vegetarian
- Contains: dairy, egg, gluten
Ingredients
- 40 g Flour, bread (strong)
- 15 g Milk, whole
- 10 g Eggs, whole, raw
- 8 g Butter, unsalted
- 6 g Sugar
- 1 g Yeast, active dry
- 0.4 g Salt
- 8 g Chocolate chips
Method
- Makes 1 slice of a 10-slice loaf; multiply all quantities by 10 for a whole Cougnou.
- Warm the milk until lukewarm and stir in the yeast and a pinch of the sugar; leave for 10 minutes until foamy.
- Mix the flour, remaining sugar and salt in a bowl. Add the yeast mixture, egg and softened butter, and knead for 8-10 minutes into a smooth, elastic dough.
- Knead in the chocolate chips — a modern stand-in for the pearl sugar or chocolate chunks traditionally studded through the loaf — then cover and leave to rise for 1 hour until doubled.
- Shape the dough into an oblong loaf with a smaller round 'head' at one end, as is traditional. Cover and prove for 30 minutes.
- Bake at 190 °C (375 °F) for 20-25 minutes, about 30 minutes for a full loaf, until golden and it sounds hollow when tapped.
