Ingredients

  • 25 g Flour, all-purpose
  • 20 g Butter, unsalted
  • 25 g Sugar
  • 15 g Eggs, whole, raw
  • 15 g Egg yolks, raw
  • 15 g Egg whites, raw
  • 90 g Cottage cheese
  • 30 g Milk, whole
  • 5 g Cornstarch
  • 1 g Vanilla extract

Method

  1. Makes 1 slice; multiply by 12 for a whole tray cake. Rub the flour, a third of the butter and a pinch of the sugar together with the whole egg to a smooth shortcrust, then press it thinly into the base of a small lined tin and chill for 15 minutes.
  2. Blind bake the base at 180 °C (350 °F) for 10 minutes until just set, then cool slightly.
  3. Beat the cottage cheese (standing in for quark) with a third of the remaining butter, half the remaining sugar, the cornstarch and half the milk until smooth; spread over the base.
  4. Beat the egg yolks with the last of the butter, sugar, milk and the vanilla until creamy, then whisk the egg whites to soft peaks and fold them in gently.
  5. Pour this custard layer over the quark layer.
  6. Bake at 170 °C (340 °F) for 45-50 minutes until the top is golden and only slightly wobbly in the centre.
  7. Cool completely in the tin (it firms up as it cools) before slicing.
