Ingredients

  • 50 g Flour, all-purpose
  • 35 g Sugar
  • 25 g Eggs, whole, raw
  • 20 g Vegetable oil
  • 2 g Baking powder
  • 35 g Orange juice

  2. Whisk the egg, sugar and vegetable oil together until pale, then whisk in the orange juice.
  3. Sift over the flour and baking powder and fold in to a smooth, pourable batter.
  4. Pour into a small lined tin and bake at 175 °C (345 °F) for 22-25 minutes until a skewer comes out clean.
  5. Cool completely, then whip the light cream with the powdered sugar to soft peaks and spread over the top.
  6. Peel and segment the mandarin, scatter the segments over the cream and dust with a little cinnamon before serving chilled.
