  • Preparation: 25 min
  • Cooking: 180 min
  • Makes: 1 serving (327 g)
  • Difficulty: Hard
  • Diets: Dairy-free, Low carb
  • Contains: celery, gluten, poultry

Ingredients

  • 180 g Goose, raw
  • 60 g Apples, raw
  • 30 g Onions, raw
  • 0.5 g Marjoram, dried
  • 0.8 g Salt
  • 0.2 g Black pepper
  • 50 g Vegetable broth
  • 5 g Flour, all-purpose

Method

  1. Prick the goose skin all over (without piercing the meat) so the fat renders freely, then rub the skin and cavity with salt, pepper and marjoram.
  2. Quarter the apple and onion and stuff them into the cavity.
  3. Set the goose breast-up on a rack in a roasting tin and roast at 160 °C (320 °F), allowing about 40 minutes per 500 g, basting every 30 minutes with the rendered fat.
  4. For the last 20 minutes, raise the heat to 220 °C (425 °F) to crisp and darken the skin, until the juices run clear and the thickest part reaches 74 °C (165 °F).
  5. Rest the goose for 15-20 minutes under foil before carving.
  6. Skim most of the fat from the tin, whisk the flour into the remaining juices over heat, then loosen with the vegetable broth to make a gravy; season and strain before serving with the sliced goose.
