- Cooking: 20 min
- Makes: 1 serving (358 g)
- Difficulty: Easy
- Diets: Gluten-free, Dairy-free
- Contains: beef, celery, mustard, sulphite
Ingredients
- 220 g Potatoes, red, raw
- 60 g Beef broth
- 40 g Onions, raw
- 15 g Vegetable oil
- 12 g Vinegar, cider
- 5 g Mustard
- 2 g Sugar
- 3 g Chives, fresh
- 0.5 g Salt

Method
- Boil the unpeeled potatoes in salted water for 15-20 minutes until just tender, then drain, peel while still warm and slice thickly.
- Warm the beef broth with the finely chopped onion for 2 minutes.
- Whisk the vinegar, mustard, sugar, salt and pepper into the warm broth, then whisk in the oil.
- Pour the warm dressing over the sliced potatoes while they are still warm, so they soak it up, and toss gently to coat without breaking them up too much.
- Leave to stand for at least 20 minutes at room temperature for the flavours to absorb.
- Scatter with the chopped chives just before serving, warm or at room temperature.
