- 120 g Bacon, raw
- 150 g Apples, raw
- 30 g Onions, raw
- 5 g Sugar

- 0.2 g Salt
- 40 g Bread, rye
Method
- Cut the bacon (streaky pork belly) into strips and fry in a dry pan over medium heat for 6-8 minutes until crisp and golden, releasing its fat.
- Lift out most of the bacon, leaving the fat in the pan, and fry the sliced onion until soft.
- Add the sliced apples, sugar and thyme, and cook gently for 8-10 minutes, stirring occasionally, until the apples are soft and lightly caramelised but still holding their shape.
- Return the bacon to the pan, season with the salt, and toss briefly together to heat through.
- Pile onto slices of dark rye bread and serve at once while the bacon is still crisp.
