  • Preparation: 120 min
  • Cooking: 30 min
  • Makes: 1 serving (106 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 45 g Flour, all-purpose
  • 25 g Milk, whole
  • 8 g Butter, unsalted
  • 8 g Sugar
  • 8 g Eggs, whole, raw
  • 1 g Yeast, active dry
  • 0.3 g Salt
  • 6 g Sugar, powdered
  • 1 g Lemon juice
  • 4 g Raisins

Method

  1. Warm the milk until lukewarm, stir in the yeast and a pinch of the sugar, and leave for 10 minutes until foamy.
  2. Mix in the flour, remaining sugar, melted butter, egg and salt, and knead to a smooth, soft dough; cover and let rise for 1 hour until doubled.
  3. Divide the dough into rounds and lengths and arrange them on a lined tray to form a simple person shape (a round head, a body, arms and legs); cover and prove for 30 minutes more.
  4. Bake at 190°C (375°F) for 20-25 minutes until golden and hollow-sounding when tapped; cool completely.
  5. Mix the powdered sugar with the lemon juice to a thick icing and drizzle it over the cooled figure.
  6. Press on raisins for the eyes and buttons, and finish with small paper flags, as is traditional at a Danish child's birthday. Makes 1 slice; multiply the ingredients by 10-12 for a whole kagemand to share.
