Ingredients

  • 70 g Rice, white, long-grain
  • 55 g Eggs, whole, raw
  • 100 g Plantains, ripe, raw
  • 100 g Tomatoes, canned, crushed
  • 20 g Onions, raw
  • 2 g Garlic, raw
  • 15 g Olive oil
  • 1 g Sugar
  • 0.4 g Salt

Method

  1. Cook the rice in salted boiling water (or by the absorption method) until tender, then keep warm.
  2. Warm half the olive oil and gently cook the finely chopped onion and garlic for 4-5 minutes until soft.
  3. Add the crushed tomatoes and sugar, season with a little of the salt, and simmer for 12-15 minutes until thickened into a rich tomato sauce.
  4. Slice the ripe plantain lengthways and fry in half the remaining oil for 2-3 minutes a side until golden and caramelized; set aside.
  5. Fry the egg in the last of the oil until the white is set but the yolk still runny.
  6. Mound the rice on a plate, and arrange the tomato sauce, fried plantain and fried egg alongside it in separate portions, as is traditional.
  7. Season with the remaining salt to taste and serve immediately while everything is hot.
