Ingredients
- 100 g Shrimp, raw
- 30 g Flour, all-purpose
- 40 g Beer

Method

- Heat the olive oil in a small deep pan or wok to 180°C (350°F).
- Holding each prawn by the tail, dip the body into the batter to coat it, letting the excess drip off.
- Fry 3-4 prawns at a time for 60-90 seconds, turning once, until the batter is pale gold and crisp; do not crowd the pan.
- Lift out onto paper towels to drain briefly, then serve immediately while hot and crisp, with a lemon wedge.
