Ingredients

  • 90 g Quince, raw
  • 70 g Sugar
  • 3 g Lemon juice

Method

  1. Peel, core and chop the quince, then simmer it in a little water until completely soft, about 25-30 minutes.
  2. Drain and mash or blend the quince to a smooth puree.
  3. Return the puree to the pan with the sugar and lemon juice, and cook over low heat, stirring constantly, for 45-60 minutes until very thick, deep amber, and a spoon dragged through leaves a clear trail.
  4. Pour into a lined small dish or tin, smoothing the top, and leave to cool and set completely, at least 4 hours.
  5. Turn out and slice; membrillo is served in thin slices alongside a hard cheese such as manchego. Makes about 2 servings; multiply the recipe for a bigger batch and store chilled.
