  • Makes: 1 serving (80.6 g)
  • Difficulty: Medium
  • Diets: Vegetarian, Dairy-free
  • Contains: alcohol, gluten, honey, sesame, sulphite

Ingredients

  • 35 g Flour, all-purpose
  • 20 g Olive oil
  • 10 g Wine, white
  • 0.5 g Anise seed
  • 2 g Sesame seeds
  • 0.5 g Orange zest
  • 12 g Honey
  • 0.3 g Cinnamon
  • 0.3 g Salt

Method

  1. Warm half the olive oil with the anise seed until fragrant, then let it cool slightly.
  2. Mix the flavoured oil with the flour, white wine, orange zest and salt into a smooth, firm dough; knead briefly and rest for 20 minutes.
  3. Roll the dough thin and cut into small squares or rounds; fold each into a simple knot or triangle, pressing sesame seeds onto one side.
  4. Heat the remaining olive oil in a small pan to 170°C (340°F) and fry the pestiños in batches for 1-2 minutes per side until golden and crisp.
  5. Drain on paper towels, then while still warm dip or drizzle them generously with the honey.
  6. Dust lightly with the cinnamon before serving; pestiños keep well for several days in a tin. Makes 1 serving (about 3 pieces); multiply the ingredients by 8 for a full batch.
