  • Makes: 1 serving (447 g)
  • Difficulty: Medium
  • Diets: Gluten-free, Low carb
  • Contains: alcohol, beef, dairy, mustard, sulphite

Ingredients

  • 200 g Beef tripe, raw
  • 60 g Onions, raw
  • 60 g Wine, white
  • 100 g Water
  • 15 g Mustard
  • 1 g Black pepper
  • 10 g Butter, unsalted
  • 0.3 g Bay leaves
  • 0.8 g Salt

Method

  1. Authentic andouillette is made from pork intestines and tripe stuffed into a natural casing, a specialist butcher's job; this home version uses beef tripe, simmered and pan-seared, to capture the same offal flavour with a peppery mustard sauce.
  2. Rinse the tripe well and cut it into thick strips. Put it in a pot with the onion, wine, water and bay leaf.
  3. Bring to a simmer, cover, and cook over low heat for 1.5-2 hours until the tripe is completely tender, topping up with a little water if the pot runs dry.
  4. Drain the tripe, reserving 60 ml of the cooking liquid, and pat the strips dry.
  5. Melt the butter in a frying pan and sear the tripe over high heat for 4-5 minutes until browned at the edges.
  6. Stir the mustard, pepper and salt into the reserved cooking liquid and pour it over the tripe. Simmer for 2 minutes to combine, then serve hot.
