Bavarois (Bavarian Cream)
One serving has 443 kcal and 11 g protein, and at least a fifth of a woman's daily need of choline (54%), vitamin A (54%), cobalamin (39%), selenium (37%), riboflavin (35%) and phosphorus (29%). Ready in 280 minutes.

- Preparation: 275 min
- Cooking: 5 min
- Makes: 1 serving (204 g)
- Difficulty: Medium
- Diets: Gluten-free
- Contains: alcohol, beef, dairy, egg, gelatin, pork
Ingredients
- 80 g Milk, whole
- 25 g Egg yolks, raw
- 25 g Sugar
- 3 g Gelatin
- 60 g Cream, heavy
- 1 g Vanilla extract
- 10 g Water
Method
- Sprinkle the gelatin over the water in a small bowl and leave to bloom for 5 minutes.
- Heat the milk with the vanilla until steaming. Whisk the egg yolks with the sugar, then slowly whisk in the hot milk.
- Return the mixture to low heat and stir constantly for 4-5 minutes until it thickens enough to coat the back of a spoon, about 82 °C (180 °F) — do not let it boil or it will curdle.
- Remove from the heat and stir in the bloomed gelatin until fully dissolved. Strain into a bowl and cool to room temperature, stirring occasionally.
- Whip the cream to soft peaks and fold it gently into the cooled custard.
- Pour into a mold or glass and chill for at least 4 hours until fully set before serving.
