  • Cooking: 90 min
  • Makes: 1 serving (183 g)
  • Difficulty: Easy
  • Diets: Vegetarian, Gluten-free, Dairy-free
  • Contains: alcohol, egg

Ingredients

  • 60 g Egg whites, raw
  • 110 g Sugar
  • 10 g Sugar, powdered
  • 1 g Cream of tartar
  • 2 g Vanilla extract

Method

  1. Makes 1 portion of about 6 small meringues; multiply by 6 for a full batch of egg whites from a dozen eggs.
  2. Whisk the egg whites with the cream of tartar in a very clean bowl until they form soft peaks.
  3. With the mixer still running, add the granulated sugar a spoonful at a time, then keep whisking for 5-6 minutes until the meringue is thick, glossy and holds stiff, shiny peaks.
  4. Sift in the powdered sugar and vanilla extract and fold through gently with a spatula.
  5. Pipe or spoon small mounds onto a tray lined with baking paper, spacing them apart.
  6. Bake at 100 °C (212 °F) for 90 minutes, then turn off the oven and leave the meringues inside with the door shut for at least 1 hour to dry out and cool completely.
  7. Peel off the paper carefully; the meringues should be crisp outside and lightly marshmallowy in the middle. Store in an airtight tin.
