  • Preparation: 15 min
  • Cooking: 10 min
  • Makes: 1 serving (143 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 35 g Chocolate, dark
  • 25 g Butter, unsalted
  • 50 g Eggs, whole, raw
  • 20 g Sugar
  • 10 g Flour, all-purpose
  • 3 g Sugar, powdered

Method

  1. Butter a small ramekin well and dust it with a little of the powdered sugar, tapping out the excess.
  2. Melt the dark chocolate and butter together in a heatproof bowl over barely simmering water, then stir until smooth and let cool slightly.
  3. Whisk the egg and sugar together for 2 minutes until pale and slightly thickened.
  4. Fold the melted chocolate into the egg mixture, then sift over the flour and fold in gently just until combined.
  5. Pour the batter into the prepared ramekin and chill for at least 15 minutes so the centre stays liquid while baking.
  6. Bake at 200 °C (400 °F) for 9-10 minutes until the sides are set but the centre still jiggles slightly.
  7. Let it rest for 1 minute, then run a knife around the edge, turn out onto a plate and dust with the remaining powdered sugar. Serve immediately while the centre is still molten.
