Ingredients

  • 60 g Puff pastry
  • 80 g Apricots, raw
  • 60 g Milk, whole
  • 20 g Egg yolks, raw
  • 20 g Sugar
  • 8 g Flour, all-purpose
  • 1 g Vanilla extract
  • 8 g Almonds
  • 5 g Sugar, powdered

Method

  1. Makes 1 pastry; multiply by 8 for a batch. Halve and stone the apricots.
  2. Make the pastry cream: whisk the milk with the vanilla in a pan and bring just to a simmer.
  3. Whisk the egg yolk with the sugar and flour until smooth, pour in a little hot milk to temper, then return it all to the pan and cook over low heat, stirring constantly, until thick. Cool with a piece of cling film pressed onto the surface.
  4. Roll the puff pastry into an oval and place on a lined tray; spread the cooled pastry cream over the middle, leaving a border.
  5. Arrange the apricot halves, cut side up, over the cream, then fold in the two ends of the pastry and pinch the long edges up around the sides like a pair of glasses, scatter with the sliced almonds.
  6. Bake at 200 °C (400 °F) for 18-20 minutes until the pastry is puffed and deep golden.
  7. Cool for 10 minutes, then dust with powdered sugar before serving warm or at room temperature.
