  • Preparation: 10 min
  • Cooking: 25 min
  • Makes: 1 serving (418 g)
  • Difficulty: Easy
  • Diets: Vegan, Gluten-free, Dairy-free
  • Contains: alcohol, sulphite

Ingredients

  • 180 g Pears, raw
  • 200 g Wine, red
  • 35 g Sugar
  • 1 g Cinnamon
  • 0.2 g Cloves
  • 2 g Lemon zest

Method

  1. Peel the pears, leaving the stalks on, and stand them upright in a small saucepan just wide enough to hold them.
  2. Pour in the red wine and add the sugar, cinnamon stick, clove and lemon zest.
  3. Bring gently to a simmer, then cover and poach for 20-25 minutes, turning the pears now and then, until tender when pierced with a knife but still holding their shape.
  4. Lift the pears out into a serving dish.
  5. Boil the poaching liquid hard for 8-10 minutes until reduced to a light syrup.
  6. Strain the warm syrup over the pears and chill for at least 1 hour; the pears will deepen to a rich burgundy colour as they sit. Serve cold, spooning over the syrup.
