  • Contains: beef, egg, mustard

Ingredients

  • 200 g Veal stew meat, raw
  • 40 g Carrots, raw
  • 40 g Onions, raw
  • 30 g Leeks, raw
  • 0.3 g Bay leaves
  • 0.1 g Cloves
  • 55 g Eggs, whole, raw
  • 8 g Mustard
  • 15 g Pickles, dill
  • 5 g Capers
  • 4 g Parsley, fresh
  • 8 g Vinegar, white
  • 15 g Olive oil
  • 1 g Salt
  • 0.3 g Black pepper

Method

  1. Since a whole calf's head is a specialist butcher order, this home version poaches veal stew meat the same way; ask your butcher for tête de veau if you want the traditional cut.
  2. Put the veal in a pot with the carrot, onion, leek, bay leaf and clove studded into the onion, cover with water and bring to a boil, skimming off any scum.
  3. Reduce to a gentle simmer, partly cover, and poach for 2.5-3 hours until completely tender.
  4. Meanwhile, boil the egg for 9 minutes, then cool, peel and chop it finely for the sauce gribiche.
  5. Whisk the mustard with the vinegar, salt and pepper, then slowly whisk in the olive oil; stir through the chopped egg, cornichons, capers and parsley.
  6. Lift the veal out of the broth, slice it, and moisten with a little of the hot broth.
  7. Serve hot with the sauce gribiche spooned over or alongside, traditionally with boiled potatoes.
