  • Makes: 1 serving (284 g)
  • Difficulty: Easy
  • Diets: Vegetarian, Gluten-free
  • Contains: alcohol, dairy, nut

Ingredients

  • 200 g Milk, whole
  • 20 g Cornstarch
  • 25 g Sugar
  • 1 g Vanilla extract
  • 8 g Almonds
  • 30 g Raspberries, raw

Method

  1. Whisk the cornstarch with a splash of the cold milk in a small bowl to make a smooth paste.
  2. Heat the remaining milk with the sugar and vanilla in a saucepan until steaming, then whisk in the cornstarch paste.
  3. Cook over medium heat, whisking constantly, for 3-4 minutes until the mixture thickens to a thick, pourable custard and no longer tastes of raw starch.
  4. Pour into a small mold or bowl, press cling film onto the surface, and chill for at least 3 hours until set.
  5. Meanwhile, crush the raspberries with a fork to make a simple sauce.
  6. Turn the blancmange out onto a plate, scatter with the almonds and spoon the raspberry sauce alongside.
