  • Preparation: 125 min
  • Cooking: 3 min
  • Makes: 1 serving (156 g)
  • Difficulty: Easy
  • Diets: Pescatarian, Low carb
  • Contains: dairy, gluten, shellfish

Ingredients

  • 90 g Shrimp, raw
  • 30 g Ghee
  • 0.3 g Cayenne pepper
  • 0.2 g Nutmeg
  • 5 g Lemon juice
  • 30 g Bread, white

Method

  1. Melt the ghee gently in a small pan. Add the shrimp, cayenne pepper and nutmeg and warm through for 2-3 minutes until the shrimp are heated and coated in the spiced butter — do not let it boil.
  2. Stir in the lemon juice, then spoon the shrimp into a small ramekin, pressing down and making sure they are fully covered by the butter.
  3. Chill for at least 2 hours, or until the butter has set solid on top, sealing the shrimp underneath.
  4. Take it out of the fridge 15 minutes before serving so the butter softens slightly, and toast the bread.
  5. Serve the potted shrimp straight from the ramekin with the hot toast.
