  • Makes: 1 serving (106 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten

Ingredients

  • 25 g Eggs, whole, raw
  • 20 g Sugar
  • 15 g Flour, all-purpose
  • 5 g Cocoa powder
  • 0.5 g Baking powder
  • 35 g Cream, heavy
  • 5 g Sugar, powdered

Method

  1. Makes 1 slice from a chocolate Swiss roll that cuts into about 8; multiply all quantities by 8 for the whole roll.
  2. Preheat the oven to 220 °C (425 °F) and line a shallow baking tray, about 23x33 cm, with parchment.
  3. Whisk the egg and sugar together for 5 minutes until pale, thick and doubled in volume.
  4. Sift in the flour, cocoa powder and baking powder and fold in gently. Spread evenly in the tray and bake for 8-10 minutes until springy and firm to the touch.
  5. Turn the sponge out onto a sheet of parchment dusted with a little of the powdered sugar. Peel off the lining paper and, while still warm, roll the sponge up from a short end with the fresh parchment inside; leave to cool rolled up.
  6. Whip the cream with the remaining powdered sugar to soft peaks.
  7. Unroll the cooled sponge, spread with the whipped cream, then roll back up firmly without the paper. Dust with a little more powdered sugar and slice to serve.
