  • Preparation: 15 min
  • Cooking: 60 min
  • Makes: 1 serving (236 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 25 g Butter, unsalted
  • 30 g Sugar
  • 30 g Eggs, whole, raw
  • 10 g Egg yolks, raw
  • 30 g Flour, self-rising
  • 30 g Cane syrup
  • 80 g Milk, whole
  • 0.5 g Vanilla extract

Method

  1. Grease a small pudding basin and spoon the golden-syrup stand-in (cane syrup) into the bottom.
  2. Beat the butter and sugar together until pale, then beat in the whole egg.
  3. Fold in the flour, then spoon the batter over the syrup in the basin. Cover with greased foil, pleated to allow for rising, and tie down.
  4. Steam over a pan of simmering water for 1 hour, topping up the water as needed, until a skewer comes out clean.
  5. Meanwhile, make the custard: heat the milk with the vanilla until steaming, then whisk in the egg yolk. Return to low heat and stir for 3-4 minutes until it thickens enough to coat the back of a spoon — do not let it boil or it will curdle.
  6. Turn the pudding out onto a plate so the syrup runs down the sides, and serve hot with the custard.
