  • Cooking: 70 min
  • Makes: 1 serving (223 g)
  • Difficulty: Hard
  • Diets: Gluten-free, Dairy-free, Low carb
  • Contains: meat, pork

Ingredients

  • 60 g Lamb liver, raw
  • 50 g Lamb heart, raw
  • 30 g Lamb sweetbreads, raw
  • 60 g Pork chitterlings, raw
  • 8 g Olive oil
  • 3 g Garlic, raw
  • 0.5 g Oregano, dried
  • 10 g Lemon juice
  • 0.8 g Salt
  • 0.2 g Black pepper

Method

  1. Kokoretsi is lamb offal wrapped in the lamb's cleaned intestines and turned slowly on a spit, above all at Greek Easter. Cleaned pork chitterlings (pig intestines, sold by many butchers) stand in here for the lamb intestines, which are hard to find outside Greece.
  2. Rinse the chitterlings very well inside and out under cold running water, then drain.
  3. Cut the liver, heart and sweetbreads into 3 cm pieces and toss them with the olive oil, crushed garlic, oregano, half the lemon juice, the salt and the pepper.
  4. Thread the offal tightly onto a long skewer (or two parallel ones), so it forms one compact log.
  5. Wrap the chitterlings around the log in a tight, overlapping spiral until it is covered, tucking the ends in.
  6. Grill over medium, indirect heat, or roast at 180 °C (350 °F), turning often, for 1-1¼ hours until the casing is crisp and deep golden and the offal is cooked through.
  7. Rest for 5 minutes, slice into rounds, sprinkle with the rest of the lemon juice and serve hot.
