Canestrelli
One serving has 466 kcal and 7 g protein, and at least a fifth of a woman's daily need of selenium (39%), thiamin (34%), vitamin A (30%), riboflavin (26%), folate (24%) and choline (20%). Ready in 40 minutes.

- Preparation: 25 min
- Cooking: 15 min
- Makes: 1 serving (105 g)
- Difficulty: Easy
- Diets: Vegetarian
- Contains: alcohol, dairy, egg, gluten
Ingredients
- 45 g Flour, all-purpose
- 25 g Butter, unsalted
- 15 g Sugar
- 10 g Egg yolks, raw
- 8 g Sugar, powdered
- 0.5 g Vanilla extract
- 1 g Lemon zest
Method
- Makes 1 portion of about 5 small cookies; multiply by 8 for a full batch. Boil an egg for 9 minutes, then cool, peel and push the yolk through a sieve.
- Beat the softened butter and sugar together until creamy, then work in the sieved boiled egg yolk, vanilla and lemon zest.
- Add the flour and bring it together into a smooth dough without overworking it; wrap and chill for 20 minutes.
- Roll the dough to about 1 cm thick and cut into small flower shapes with a hole in the centre of each (a small and a large round cutter both work).
- Bake at 160 °C (320 °F) for 12-15 minutes until pale gold at the edges; they stay quite pale.
- Cool on the tray until firm enough to lift, then dust generously with the powdered sugar.
