  • Cooking: 25 min
  • Makes: 1 serving (545 g)
  • Difficulty: Hard
  • Diets: High protein
  • Contains: beef, celery, dairy, egg, gluten, pork, poultry

Ingredients

  • 60 g Pasta, fresh egg
  • 40 g Pork, ground, raw
  • 20 g Mortadella
  • 10 g Parmesan cheese
  • 15 g Eggs, whole, raw
  • 0.1 g Nutmeg
  • 400 g Chicken stock, homemade
  • 0.3 g Salt

Method

  1. Cook the ground pork in a dry pan over medium heat, breaking it up, until cooked through and lightly browned; cool slightly.
  2. Finely chop or process the cooked pork with the mortadella until almost a paste, then mix in the parmesan, a third of the egg and the nutmeg to make the filling.
  3. Roll the fresh pasta thinly and cut into small squares about 4 cm across.
  4. Place a little filling in the centre of each square, brush the edges with the remaining beaten egg, fold into a triangle and press out the air, then wrap the two bottom corners around your finger and pinch them together to make the little 'hat' shape.
  5. Bring the chicken stock to a gentle simmer and season lightly with the salt.
  6. Cook the cappelletti in the simmering stock for 4-5 minutes until they float and the pasta is tender.
  7. Ladle into a bowl with plenty of the hot broth and serve immediately with extra grated parmesan if you like.
