  • Preparation: 40 min
  • Cooking: 40 min
  • Makes: 1 serving (349 g)
  • Difficulty: Medium
  • Contains: beef, dairy, gluten, pork

Ingredients

  • 90 g Semolina
  • 40 g Water
  • 0.05 g Saffron
  • 0.6 g Salt
  • 70 g Italian sausage, raw
  • 100 g Tomato puree
  • 30 g Onions, raw
  • 8 g Olive oil
  • 10 g Pecorino Romano cheese
  • 0.2 g Black pepper

Method

  1. Dissolve a pinch of the saffron in the water and mix into the semolina with a pinch of the salt to make a firm, smooth dough; knead for 8-10 minutes, then rest, covered, for 20 minutes.
  2. Roll small pieces of dough into thin ropes and cut into short lengths, then press and roll each piece against a ridged gnocchi board or the tines of a fork to curl it into a little ridged shell.
  3. Spread the shaped malloreddus out on a floured tray to dry a little while you make the sauce.
  4. Squeeze the sausage meat out of its casing and crumble it into a pan with the olive oil and chopped onion; cook for 5-6 minutes until the onion softens and the sausage browns.
  5. Add the tomato puree and the remaining saffron, season with pepper, and simmer gently for 15-20 minutes until thickened.
  6. Cook the malloreddus in a large pot of salted boiling water for 4-6 minutes until they float and are tender, then drain.
  7. Toss the pasta through the sauce and serve with the pecorino romano grated over.
