  • Cooking: 180 min
  • Makes: 1 serving (561 g)
  • Difficulty: Medium
  • Diets: High protein
  • Contains: alcohol, beef, celery, dairy, gluten, sulphite

Ingredients

  • 120 g Beef chuck, raw
  • 250 g Onions, raw
  • 20 g Carrots, raw
  • 20 g Celery, raw
  • 12 g Olive oil
  • 30 g Wine, white
  • 10 g Tomato paste
  • 0.2 g Bay leaves
  • 0.2 g Black pepper
  • 0.5 g Salt
  • 8 g Pecorino Romano cheese
  • 90 g Pasta, dry

Method

  1. Slice the onions thinly and finely dice the carrot and celery.
  2. Heat the olive oil in a heavy pot and brown the beef chuck all over in one piece (or in large chunks).
  3. Add the onions, carrot and celery, season with salt and pepper, and stir well to coat in the fat.
  4. Pour in the white wine and let it bubble for a minute, then add the tomato paste and bay leaf.
  5. Cover and cook over the lowest possible heat for 3 hours, stirring occasionally and adding a splash of water if it looks dry, until the onions have completely broken down into a thick, sweet, amber sauce and the meat is falling-apart tender.
  6. Shred or dice the meat back into the sauce and check the seasoning.
  7. Cook the pasta in salted boiling water until al dente, then toss through the sauce and serve with the pecorino romano grated over.
