- Preparation: 80 min
- Cooking: 22 min
- Makes: 1 serving (175 g)
- Difficulty: Medium
- Contains: dairy, egg, gluten, pork
Ingredients
- 60 g Flour, bread (strong)
- 20 g Milk, whole
- 5 g Butter, unsalted
- 1 g Yeast, active dry
- 0.5 g Salt
- 80 g Pork, ground, raw

- 8 g Eggs, whole, raw
Method
- Warm the milk until lukewarm, stir in the yeast and leave for 10 minutes until foamy. Mix with the flour, salt and softened butter and knead for 8 minutes to a smooth dough. Cover and leave to rise for 1 hour.
- Meanwhile, season the ground pork well with the nutmeg and pepper and mix thoroughly.
- Shape the meat into a sausage about 10 cm long.

- Place seam-side down on a tray, brush with the beaten egg, cover and prove for 20 minutes.
- Bake at 200 °C (400 °F) for 20-25 minutes until the bread is golden and the meat inside is cooked through to at least 74 °C (165 °F).
