  • Cooking: 27 min
  • Makes: 1 serving (87.6 g)
  • Difficulty: Medium
  • Diets: Vegan, Dairy-free
  • Contains: gluten, sesame

Ingredients

  • 45 g Flour, bread (strong)
  • 32 g Water
  • 1 g Yeast, active dry
  • 0.6 g Salt
  • 2 g Vegetable oil
  • 1 g Sugar
  • 5 g Rice flour
  • 1 g Sesame oil

Method

  1. Makes 1 slice of a 12-slice loaf; multiply all quantities by 12 for a whole loaf.
  2. Mix the bread flour, half the water, the yeast, the oil and the salt to a smooth dough; knead for 8 minutes until elastic. Cover and leave to rise for 1 hour until doubled.
  3. Shape into a round or oblong loaf, place on a tray, cover loosely and prove for 30 minutes.
  4. For the tiger topping, mix the rice flour, remaining water, sugar and sesame oil into a smooth, spreadable paste.
  5. Spread the paste evenly over the top of the risen loaf just before baking — it cracks into the characteristic tiger stripes as it bakes.
  6. Bake at 220 °C (425 °F) for 25-30 minutes, about 35 minutes for a full loaf, until the crust is deep golden and crackled and the loaf sounds hollow when tapped on the base.
