One serving has 557 kcal and 16 g protein, and at least a fifth of a woman's daily need of selenium (84%), riboflavin (64%), cobalamin (63%), phosphorus (52%), choline (49%) and thiamin (46%). Ready in 30 minutes.

- Preparation: 10 min
- Cooking: 20 min
- Makes: 1 serving (356 g)
- Difficulty: Easy
- Diets: Vegetarian
- Contains: dairy, egg, gluten
Ingredients
- 40 g Pasta, dry
- 250 g Milk, whole
- 40 g Sugar
- 20 g Egg yolks, raw
- 1 g Lemon zest
- 0.3 g Cinnamon
- 5 g Butter, unsalted
Method
- Bring the milk to a gentle simmer with the lemon zest and butter.
- Break the vermicelli into short lengths and add to the simmering milk, cooking for 6-8 minutes, stirring often, until tender and much of the milk has been absorbed.
- Stir in the sugar until dissolved.
- Take off the heat and let cool for a couple of minutes, then beat in the egg yolks briskly so they thicken the pudding without scrambling.
- Return to very low heat for 1-2 minutes, stirring constantly, until the mixture visibly thickens; do not let it boil.
- Pour into a serving dish or bowl, smooth the top, and dust generously with cinnamon, often traced into a pattern.
- Chill for at least 1 hour before serving; it can also be served just warm.
