  • Preparation: 20 min
  • Cooking: 10 min
  • Makes: 1 serving (198 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, honey

Ingredients

  • 80 g Cream, heavy
  • 43 g Sugar
  • 30 g Egg yolks, raw
  • 25 g Water
  • 20 g Graham crackers

Method

  1. Crush the graham crackers (standing in for Maria biscuits) coarsely and scatter them over the bottom of a small glass serving dish.
  2. Whip the heavy cream with a small spoonful of the sugar to firm peaks and spread half of it over the crushed biscuits.
  3. Make a light sugar syrup by simmering the water with the rest of the sugar for 3-4 minutes.
  4. Off the heat, whisk the egg yolks in a bowl, then slowly whisk in the hot syrup, and return the mixture to low heat, stirring constantly, until it thickens into a smooth, glossy custard; do not let it boil.
  5. Let the custard cool for a few minutes, then spoon it evenly over the whipped cream layer.
  6. Top with the remaining whipped cream, swirling it decoratively, and chill for at least 2 hours before serving.
