Ingredients

  • 130 g Flour, bread (strong)
  • 2 g Yeast, active dry
  • 13 g Olive oil
  • 1.5 g Salt
  • 75 g Water
  • 100 g Lamb, ground, raw
  • 40 g Tomato puree
  • 60 g Mozzarella, low-moisture
  • 30 g Lettuce, iceberg, raw
  • 30 g Tomatoes, raw
  • 30 g Yogurt, plain
  • 3 g Garlic, raw
  • 0.3 g Black pepper
  • 0.5 g Cumin

Method

  1. Dissolve the yeast in the water, mix with the flour, half the olive oil and half the salt, and knead for 8-10 minutes to a smooth dough; cover and let rise for 45-60 minutes until doubled.
  2. Mix the ground lamb with the cumin, remaining salt and the pepper, and fry in a hot pan, breaking it into small crumbles, until well browned and cooked through.
  3. Stir the crushed garlic into the yogurt with a small pinch of salt to make a garlic sauce.
  4. Roll or stretch the dough into a round on a floured tray and spread the tomato puree over it, leaving a bare border.
  5. Scatter the mozzarella and cooked lamb over the sauce, and brush the bare edge with the remaining olive oil.
  6. Bake at 250°C (480°F) for 10-12 minutes until the crust is golden and the cheese is bubbling.
  7. Scatter the fresh shredded lettuce and diced tomato over the hot pizza and drizzle with the garlic yogurt sauce just before serving.
