- Preparation: 15 min
- Cooking: 25 min

- Difficulty: Medium

- Contains: dairy, egg
Ingredients
- 70 g Artichoke bottoms (2, cooked or tinned)
- 120 g Spinach
- 10 g Shallot
- 2 g Garlic
- 25 g Double cream
- 30 g Butter, unsalted (for the spinach and the hollandaise)
- 100 g Eggs (to poach)
- 17 g Egg yolk (for the hollandaise)
- 5 g Lemon juice
- 5 g White vinegar (for the poaching water)
- 0.1 g Nutmeg
- 0.1 g Cayenne pepper
- 0.5 g Salt
Method
- Make the creamed spinach. Wash the spinach and wilt it in a dry pan for 2 minutes, then squeeze out as much water as you can and chop it finely. Soften the finely chopped shallot and garlic in 5 g of the butter over low heat for 3 minutes, add the spinach and the cream and simmer for 3-4 minutes, until thick. Season with a pinch of salt and nutmeg and keep warm.
- Make the hollandaise. Melt the remaining butter. In a heatproof bowl set over a pan of barely simmering water, whisk the egg yolk with 1 tablespoon of water and the lemon juice for 2-3 minutes, until thick and pale and the whisk leaves a trail. Take the bowl off the heat and whisk in the warm butter a few drops at a time, then in a thin stream, until the sauce is thick and glossy. Season with a pinch of salt and cayenne, and keep it warm over the pan with the heat off.
- Warm the artichoke bottoms in simmering water for 3-4 minutes, then drain them and pat them dry.
- Poach the eggs: bring a deep pan of water to a bare simmer with the vinegar, stir it into a gentle whirlpool and slip in one egg at a time. Poach for 3 minutes, until the whites are set and the yolks still runny, then lift them out with a slotted spoon and drain them on kitchen paper.
- Spoon the creamed spinach onto a warm plate, set the artichoke bottoms on it, cup side up, and put a poached egg in each. Spoon the hollandaise over, dust with a little cayenne and serve straight away.
