Ingredients

  • 160 g Ripe cherry tomatoes
  • 5 g Garlic
  • 6 g Basil, fresh
  • 0.5 g Dried chilli (peperoncino)
  • 15 g Extra virgin olive oil
  • 1 g Salt
  • 110 g Spaghetti
  • 20 g Pecorino, grated
  • 0.2 g Black pepper

Method

  1. Wash and quarter the tomatoes and put them in a large bowl with the finely chopped garlic, the torn basil, the crumbled chilli, the olive oil and half the salt. Stir and leave for 15-20 minutes, while the pasta water comes to the boil, so the tomatoes give up their juice.
  2. Bring a large pan of water to the boil with the rest of the salt and cook the spaghetti for 9-11 minutes, until al dente.
  3. Drain it, keeping a little of the water, and tip the hot spaghetti straight into the bowl of tomatoes. Toss it well for a minute: the heat of the pasta warms the sauce without cooking it.
  4. Add the pecorino and toss again with a spoonful of the pasta water to make it creamy. Grind over some pepper.
  5. Serve at once. The name means carter's style: Sicilian cart drivers made it on long journeys from what kept, garlic, oil and cheese, with fresh tomatoes and no cooking but the pasta.
