  • Preparation: 45 min
  • Cooking: 50 min
  • Makes: 1 serving (101 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 6 g Plain flour (for the streusel)
  • 8.5 g Brown sugar (for the streusel)
  • 0.2 g Ground cinnamon (for the streusel)
  • 5 g Cold butter, diced (for the streusel)
  • 4.2 g Brown sugar (for the swirl)
  • 0.4 g Ground cinnamon (for the swirl)
  • 9.5 g Butter, softened (for the cake)
  • 16.5 g Sugar
  • 8.5 g Eggs
  • 20 g Sour cream
  • 0.4 g Vanilla extract
  • 21 g Plain flour (for the cake)
  • 0.3 g Baking powder
  • 0.4 g Baking soda
  • 0.1 g Salt

Method

  1. Heat the oven to 175 °C (350 °F). Butter a 23 cm square cake tin and line the base with baking paper.
  2. For the streusel, mix the flour, brown sugar and cinnamon for the streusel, then rub in the cold butter with your fingertips until it forms clumpy crumbs. Chill it while you make the cake. For the swirl, mix the brown sugar and cinnamon for the swirl in a small bowl.
  3. Beat the butter for the cake with the sugar until pale and fluffy, then beat in the eggs one at a time, followed by the sour cream and vanilla. Mix the flour for the cake with the baking powder, baking soda and salt, and stir them in until just combined; the batter will be thick.
  4. Spread half the batter in the tin, sprinkle the cinnamon swirl over it, then drop the rest of the batter on top in spoonfuls and spread it gently. Run a knife through both layers in a few loops to swirl them, then scatter the streusel evenly over the top.
  5. Bake for 45-50 minutes, until the streusel is golden and a skewer pushed into the middle comes out clean.
  6. Leave it to cool in the tin for at least 20 minutes, then cut it into 12 squares. Serve it warm or at room temperature, with coffee. Makes 12 squares; the amounts are for one serving, so multiply every ingredient by 12 for the whole cake.
