  • Makes: 1 serving (583 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: dairy, egg, gluten, honey

Ingredients

  • 25 g Beyaz peynir (white cheese)
  • 20 g Kaşar cheese
  • 15 g Black olives
  • 50 g Egg
  • 80 g Tomato
  • 80 g Cucumber
  • 30 g Sivri biber (long green pepper)
  • 3 g Parsley, fresh
  • 5 g Olive oil
  • 50 g Bread (or simit)
  • 10 g Honey
  • 15 g Kaymak (clotted cream)
  • 200 g Black tea, brewed

Method

  1. Boil the egg for 8 minutes for a soft-set yolk (10 for hard-boiled), cool it in cold water, peel and halve it.
  2. Slice the tomato and cucumber and lay them on a plate with the whole peppers. Scatter the parsley over and drizzle with a little of the olive oil.
  3. Arrange the white cheese and the sliced kaşar on the plate, or in small dishes, and the olives drizzled with the rest of the olive oil.
  4. Put the kaymak in a small dish with the honey poured over it (bal-kaymak), for spreading on bread.
  5. Warm the bread or simit in the oven for 3-4 minutes. Brew strong tea in the top pot of a double teapot (çaydanlık) and serve it in small tulip glasses, diluted to taste with hot water from the bottom pot. A Turkish breakfast is eaten slowly, a little of everything.
