Ingredients

  • 70 g Rice, white (soaked)
  • 30 g Rice, cooked
  • 100 g Water
  • 1 g Yeast, active dry
  • 4 g Sugar
  • 0.3 g Baking soda
  • 0.3 g Salt
  • 8 g Vegetable oil (for the pan)
  • 5 g Groundnut oil (for the sauce)
  • 25 g Onion
  • 50 g Tomato
  • 3 g Scotch bonnet or red chilli
  • 80 g Spinach (alayyahu)

Method

  1. Rinse the raw rice and soak it in cold water for 6 hours or overnight.
  2. Drain it and blend with the cooked rice and about 100 ml water into a smooth, thick batter. Stir in the yeast and sugar, cover and leave in a warm place for 1½-2 hours, until bubbly and nearly doubled.
  3. Meanwhile make the sauce: cook the chopped onion in the groundnut oil for 3 minutes, add the chopped tomato and chilli and cook for 5 minutes until thick, then stir in the chopped spinach with a pinch of the salt for 2-3 minutes, until wilted.
  4. Just before cooking, stir the rest of the salt and the baking soda into the batter.
  5. Heat a small heavy frying pan (about 15 cm) over medium heat and brush it with oil. Pour in a ladle of batter so it spreads about 1 cm thick, cover with a lid and cook for 3-4 minutes, until the top is set and full of holes like a sponge and the bottom is golden. Sinasir is cooked on one side only. Make 4 in all.
  6. Serve them warm, holey side up, with the spinach sauce, or with yaji spice and a little sugar, as in northern Nigeria.
