  • Makes: 1 serving (378 g)
  • Difficulty: Medium
  • Diets: Vegetarian
  • Contains: alcohol, dairy, egg, gluten

Ingredients

  • 35 g Plain flour
  • 0.2 g Salt
  • 30 g Egg
  • 70 g Milk, whole
  • 20 g Water
  • 8 g Butter, unsalted (melted, for the batter and frying)
  • 90 g Farmer cheese (or ricotta)
  • 20 g Cream cheese
  • 8 g Egg yolk
  • 10 g Sugar
  • 1 g Vanilla extract
  • 1 g Lemon zest
  • 25 g Sour cream (to serve)
  • 60 g Strawberries (to serve)

Method

  1. Whisk the flour and salt in a bowl, then whisk in the egg, milk, water and half the melted butter until you have a smooth, thin batter, like single cream. Leave it to rest for 20 minutes.
  2. Make the filling: if the farmer cheese is wet, drain it in a sieve first. Mash it with the cream cheese, egg yolk, sugar, vanilla and lemon zest until smooth.
  3. Heat an 18-20 cm frying pan over medium heat and brush it with a little butter. Pour in about 3 tablespoons of batter and swirl it to coat the pan thinly. Cook for about 1 minute, until the top is set and the edge lifts, cooking one side only, then slide it onto a plate, browned side up. Make three.
  4. Put a third of the filling on the browned side of each pancake, near one edge. Fold the sides over it and roll it up into a neat parcel.
  5. Brush the pan with the rest of the butter and fry the blintzes seam side down over medium-low heat for 3 minutes a side, until golden and hot through.
  6. Serve warm with the sour cream and sliced strawberries. Cheese blintzes are a dish of Shavuot, the festival when dairy foods are eaten.
