One serving has 487 kcal and 19 g protein, and at least a fifth of a woman's daily need of selenium (91%), choline (72%), riboflavin (63%), thiamin (42%), phosphorus (38%) and cobalamin (37%). Ready in 15 minutes.

- Preparation: 5 min
- Cooking: 10 min
- Makes: 1 serving (198 g)
- Difficulty: Easy
- Diets: Vegetarian
- Contains: dairy, egg, gluten, honey
Ingredients
- 70 g Pitta or day-old flatbread
- 100 g Eggs
- 0.4 g Salt
- 0.2 g Black pepper
- 12 g Samneh (clarified butter) or ghee
- 15 g Honey (to serve)
Method
- Tear the bread into rough pieces about 2-3 cm across.
- Beat the eggs in a bowl with the salt and pepper.
- Melt the samneh in a frying pan over medium heat. Add the bread and fry it for 3-4 minutes, turning the pieces, until they have soaked up the butter and are golden and crisp at the edges.
- Lower the heat, pour the eggs over the bread and stir gently for 1-2 minutes, so every piece is coated, until the eggs are just set but still soft.
- Tip it onto a warm plate and drizzle with honey. Yemenite Jews brought fatoot to Israel, where it is eaten for breakfast; samneh is the clarified butter of Yemen.
