  • Cooking: 20 min
  • Makes: 1 serving (418 g)
  • Difficulty: Easy
  • Diets: Vegetarian
  • Contains: celery, dairy, gluten

Ingredients

  • 120 g Poblano peppers
  • 90 g Spaghetti
  • 30 g Onion
  • 4 g Garlic
  • 10 g Coriander leaves
  • 60 g Mexican crema or single cream
  • 25 g Cream cheese
  • 50 g Vegetable stock
  • 0.5 g Salt
  • 0.2 g Black pepper
  • 8 g Butter, unsalted
  • 20 g Queso fresco, crumbled

Method

  1. Char the poblanos directly over a gas flame or under a hot grill for 8-10 minutes, turning them, until blistered and blackened all over. Put them in a bowl, cover it and leave them to steam for 10 minutes.
  2. Bring a large pan of water to the boil and cook the spaghetti for about 10 minutes, until al dente.
  3. Rub the skins off the poblanos and pull out the stems, seeds and pale veins, which hold most of the heat. Blend the flesh with the onion, garlic, coriander, cream, cream cheese, stock, salt and pepper until very smooth.
  4. Melt the butter in a pan over medium-low heat, pour in the sauce and simmer it gently for 4-5 minutes, stirring, until it thickens slightly and no longer tastes of raw onion.
  5. Drain the spaghetti, keeping a little of its water, and toss it in the sauce over low heat for 1 minute, loosening it with a splash of the pasta water if needed.
  6. Serve topped with the crumbled queso fresco. In Mexico espagueti verde is a favourite for birthdays and Christmas as well as a quick weeknight meal.
