Ingredients

  • 80 g Rice, broken into coarse grits
  • 50 g Water (for moistening the grits)
  • 50 g Moringa leaves (zogale), fresh
  • 1 g Salt
  • 50 g Onion, finely chopped
  • 30 g Tatashe (red bell pepper), finely chopped
  • 4 g Scotch bonnet (ata rodo), finely chopped
  • 3 g Garlic, crushed
  • 2 g Ginger, grated
  • 30 g Roasted groundnuts, finely crushed (or kuli-kuli)
  • 15 g Groundnut oil

Method

  1. Pulse the rice in a dry blender or grinder in short bursts until it breaks into coarse grits, like couscous, not flour. Sift off any fine powder. Wash the grits quickly in a sieve and drain them well.
  2. Sprinkle the grits with half the water and rub them between your fingers so every grain is damp. Put them in a steamer basket lined with a damp cloth over boiling water, cover tightly and steam for 20 minutes, until softened.
  3. Meanwhile strip the moringa leaves from their stems, wash them in several changes of water, rub them with a pinch of the salt and squeeze out the bitter juice.
  4. Tip the hot grits into a bowl, sprinkle with the rest of the water and break up any lumps. Mix in the moringa, onion, tatashe, scotch bonnet, garlic, ginger, crushed groundnuts, the rest of the salt and half the oil.
  5. Return everything to the steamer and steam for 20-25 minutes more, until the grits are tender and the leaves have darkened.
  6. Stir in the rest of the groundnut oil and serve hot. Dambu is a northern Nigerian dish, eaten as a main meal, often with yaji pepper spice sprinkled over.
