  • Preparation: 20 min
  • Cooking: 28 min
  • Makes: 1 serving (75.2 g)
  • Difficulty: Easy
  • Contains: dairy, gluten, pork

Ingredients

  • 28 g Plain flour
  • 0.2 g Salt
  • 7 g Butter, unsalted, cold
  • 7 g Lard, cold
  • 8 g Caster sugar
  • 15.5 g Currants
  • 9.5 g Whole milk

Method

  1. Heat the oven to 200 °C (400 °F) and line a large baking tray with baking paper.
  2. Mix the flour and salt in a large bowl. Cut the butter and lard into small pieces and rub them into the flour with your fingertips until it looks like coarse breadcrumbs.
  3. Stir in all but a tablespoon of the sugar, and the currants, then add the milk, keeping back a tablespoon or two, and mix with a knife to a soft but not sticky dough. Bring it together with your hands; don't knead it.
  4. Roll the dough out on a lightly floured surface into a rectangle about 22 × 30 cm and 1.5 cm thick, and lift it onto the tray. Score a criss-cross pattern over the top with the back of a knife, like a fishing net, cutting only a few millimetres in.
  5. Brush the top with the milk you kept back and sprinkle over the rest of the sugar. Bake for 25-30 minutes, until it is golden brown on top and firm at the edges; it stays a little soft in the middle, which is how a heavy cake should be.
  6. Leave it to cool on the tray for 15 minutes, then cut it into 16 squares. Eat it warm or cold, on the day or the next.
  7. Makes 16 squares; the amounts are for one serving, so multiply every ingredient by 16 for the whole cake.
