Ingredients

  • 180 g Potatoes
  • 30 g Green pepper
  • 30 g Red pepper
  • 40 g Onion
  • 12 g Vegetable oil
  • 0.5 g Paprika
  • 0.5 g Salt
  • 0.2 g Black pepper
  • 2 g Parsley, fresh

Method

  1. Scrub or peel the potatoes and cut them into 1.5 cm dice. Put them in a pan of cold water, bring to the boil and cook for 4-5 minutes, just until the edges soften but the cubes keep their shape. Drain well and leave them to steam dry for 5 minutes.
  2. Cut the peppers and onion into 1 cm pieces.
  3. Heat the oil in a heavy frying pan, ideally cast iron, over medium-high heat. Add the potatoes in a single layer and leave them alone for 5 minutes, until a golden crust forms underneath.
  4. Turn them, add the onion and peppers and cook for 8-10 minutes more, turning every couple of minutes, until the potatoes are crisp and brown on several sides and the peppers are soft and charred at the edges.
  5. Season with the salt, pepper and paprika, scatter with chopped parsley and serve hot, with eggs at breakfast or beside a main course.
